Beef Adobo with Coconut Milk (Adobong Baka sa Gata)
In a saucepan over low heat, add oil and saute garlic and onions.
Add the beef and cook until lightly browned.
Add salt, pepper and vinegar, but do not stir. Cook over medium heat until liquid is reduced to half.
Add water and simmer until beef is tender.
Add coconut milk and chili pepper. Stir.
Simmer for 10 minutes in low heat.
Season with fish sauce and simmer for another 5 minutes.
Serve over rice.
