Beef in Tamarind Broth (Beef Sinigang)

Ingredients

  • 1kg beef brisket
  • 2 large tomatoes, quartered
  • 1 large red onion, chopped
  • 4 pcs. gabi (taro)
  • 200g medium okra, cut into two
  • 1 bunch string beans
  • 1 bunch water spinach leaves (kang kong leaves)
  • 250g fresh young tamarind fruit
  • 3 pcs. green chillies
  • water
  • fish sauce

Method

In a pot, boil the tamarind fruit with water, about 4 cups, until tender.

Transfer the tender tamarind to a bowl and then mash with the back of a spoon until juices come out.

Put it back in the pot and stir. Strain the contents of the pot and set aside the strained tamarind broth in a clean pot.

In a heated pan or grill, sear the beef cubes on all sides.

Add the beef, green chillies, tomatoes, onion and taro into the pot with the tamarind broth and bring to boil until taro is cooked.

Add the string beans and okra. Simmer for 3 minutes.

Season with fish sauce and the spinach leaves.

Simmer for another 5 minutes.

Serve with rice.
