Beef Shank in Sour Broth (Beef Kansi)
1 In a pressure cooker, saute garlic in oil.
Add the beef shank, tomatoes, ginger and onions. Pour enough water to cover everything and close the lid. Cook for 30 minutes.
Check the beef shank if tender and remove the scum that floats on top.
Add the lemongrass, annatto powder and kamias or batwan fruit or the sinigang mix. (and corn -optional)
Close the lid of the pressure cooker and continue cooking until beef is very tender for another 30-40 minutes.
Add the chillies and jackfruit and continue cooking until jackfruit is tender.
Season with fish sauce (if needed)
Serve with rice.
