Braised Beef in Short Ribs
In a large bowl, combine beef bone in short ribs, half of the minced garlic, pineapple juice, fish sauce, soy sauce and pepper. Let it marinate for at least 1 hour. Note: the longer the better.
Heat oil in a pan. Fry the sweet potato until lightly browned. Remove and set aside.
Over medium heat, sauté onion in the pan using the remaining oil until soft. Add the garlic and sauté for 30 sec or until fragrant.
Add the short ribs and cook each side for 3 minutes or until lightly browned.
Add the marinade sauce and water then bring it to a boil.
Add the tomato sauce. Stir and cover the pan. Continue cooking in low heat for 30 to 45 minutes or until the meat is tender.
Add the cheese, mix and let it melt. Season with fish sauce and ground black pepper if needed.
Remove from the Pan and serve it with rice!
