Honey Mustard Pork Collar Chops

Preparation

Cook Time: 60 minutes

Serves: 2

Ingredients

  • 2 pork collar chops
  • 1 yellow medium onion, diced
  • 1 tsp thyme
  • 1 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 2 tbsp cream
  • 1 tbsp honey

Method

Preheat the oven to 160C

Season the pork well with salt, pepper and thyme.

In a frying pan on medium heat, put olive oil and sear the chops on both sides for about 1 minute on each side.

Remove the chops from the pan and transfer to an oven proof pan.

Place in the oven for 30 minutes to an hour until cooked to your liking.

While waiting for the pork to cook, mix in a small bowl the cream, honey and mustard.

Put the mixture in the same frying pan where the pork were seared and bring the mixture to boil. Set aside this sauce.

After baking the pork, let it rest for 10 minutes.

Serve the chops with the honey mustard sauce.
