Pan Seared Pork Collar Chops

Serves: 4

Ingredients

  • 2 pork collar chops, 1inch thick
  • 1 tbsp oil
  • 2 tsp cumin
  • 2 tsp salt
  • 2 tsp black pepper

Method

Season the chops very well with salt, pepper and cumin.

Over medium-high heat a cast iron skillet for 2-3 minutes.

Add oil to the skillet and sear the chops for about 3-4 minutes per side.

Cook until internal temperature is at least 63C and the juices run clear.

Transfer chops to a warm plate and serve immediately with roasted vegetables.
