Pork Adobo

Preparation

Prep Time:  1 hour and 15 minutes

Cook Time: 1 hour

Serves: 4

Ingredients

  • 1 kg pork belly, cubed
  • 1 red onion, peeled and thinly sliced
  • 1 head garlic, peeled and minced
  • ¼ cup cooking oil
  • 5 pieces dried bay leaves
  • 1 cup vinegar
  • 1/2 cup soy sauce
  • 1 tablespoon peppercorn
  • 1 ½ cups water, or as needed
  • Salt to taste
  • Optional: 1-2 pcs boiled egg

Method

Combine the pork belly, soy sauce, onions and garlic then marinate for at least 1 hour

In a large pot, pour the cooking oil in medium heat and fry the marinated pork belly for 3-5 minutes.

Pour remaining marinade, even the garlic and onions left.

Add vinegar, peppercorn, dried bay leaves, and water and bring to a boil.

Continue to simmer for another 15 to 20 minutes.

Optional: cut the boiled eggs into 2 then mix it in the adobo.

Add salt to taste

Best served with steamed or garlic rice.
