Pork Dinakdakan

Preparation

Prep Time:  15 minutes

Cook Time: 45 minutes

Serves: 4

Ingredients

  • 1kg pork jowl
  • 113g mayonnaise
  • 3 tbsp soy sauce
  • juice of 3 pcs of lime
  • 2 red onions, sliced into thin pieces
  • 10 pcs. red chili peppers, chopped
  • 3 pcs. green chili peppers, sliced 
  • 1500ml water
  • 1 tsp salt
  • ½ tsp black pepper

Method

In a pot, boil the pork jowl in water for about 30-35 minutes.

Remove pork from the pot and let it cool.

Rub 1 tsp salt and ½ tsp black pepper over the pork and let it stand for 10 minutes.

Over hot coals, grill the pork jowl on each side until crisp and slightly charred. Allow to cool and dice into thin pieces.

In a mixing bowl, combine mayonnaise, soy sauce, lime juice. Mix well and set aside this dressing.

Toss the onion and chili peppers in another bowl and add the pork jowl.

Add the dressing and toss all together until well blended.

Season with salt and pepper.
