Roast Pork Collar

Preparation

Prep Time:  15 minutes

Cook Time: 2 hours and 30 minutes

Serves: 4

Ingredients

  • 2kg pork collar
  • 1 head garlic, chopped
  • 1 tsp dried rosemary
  • 2 tsp salt
  • 1 tsp black pepper
  • 71ml oil

Method

In a bowl, combine the garlic, rosemary, salt, pepper and oil.

Immerse the pork collar into the mixture, rubbing the ingredients unto its surface.

Put the pork and the mixture in a large ziplock bag and make sure that it is sealed with little to no air inside.

Put inside the fridge to marinate it overnight.

Preheat the oven to 180C

Place the marinated pork in a pan over a separate water-filled pan in the oven.

Bake for about 2 hours until very tender.

Once done, slice the pork and serve with vegetables and potatoes on the side.
