Roast Smoked Loin of Pork with Herb Mash

Preparation

Prep Time:  5 minutes

Cook Time: 75 minutes

Serves: 4

Ingredients

  • 1½ kg (3 lbs) loin of pork 
  • 250ml (½ pt) cider
  • sprig of thyme
  • 1kg (2 lbs) creamy mashed potatoes
  • 2 tbsp. chives and parsley
  • Butter, dash of Whiskey

Method

Set oven Gas Mark 6, 200°C (400°F).

Roast the loin of pork for approx. ½-1 hour.

Divide the mixture into four and shape into four potato cakes. Dust each one with a little flour and fry in hot butter until golden brown on each side – keep warm.

When the meat is cooked, wrap and keep warm.

Boil up the juices in the pan. Set aside. Mix the creamy potatoes with the chives and parsley.
