Stewed Beed in Peanut Butter Sauce (Beef Kare-kare)

Preparation

Cook Time: 60-120 minutes

Serves: 4

Ingredients

  • 1 kg beef chuck, cubes
  • 1 head garlic, minced
  • 1 large onion, chopped
  • 32g annatto seeds soaked in 125ml boiling water
  • 1000ml beef stock
  • 227g unsalted peanut butter
  • 32g ground toasted rice
  • 3 tbsp brown sugar
  • black ground pepper
  • fish sauce
  • water
  • cooking oil

Stir-Fried Vegetables

  • 1 bunch string beans, cut into 2 inch slices
  • 1 large eggplant, sliced
  • 1 bundle bok choy, lower end tips cut-off
  • 1 tbsp shrimp paste (bagoong)
  • 1 tbsp oil
  • 4 cloves garlic, minced

Method

In a pot, heat oil and saute garlic and onions until onions are translucent. Season with black ground pepper.

Add the beef and cook until light brown in color.

Add beef stock and bring to boil. Cover and simmer until beef is really tender or about 1-2 hours. (Add water if needed)

In a saucepan, stir fry the vegetables in garlic and shrimp paste until tender or about a minute and set aside.

Once beef is tender, turn off heat. Add brown sugar, toasted rice, peanut butter and water from the soaked annatto seeds into the pot. Mix until even in consistency. Turn on heat and let it boil.

Once boiling, turn heat to low and add the stir-fried vegetables.

Simmer for another 5 minutes.

Season with fish sauce if needed.

Serve hot with rice.
